There’s just something about a grilled cheese sandwich that simply can’t be beat. Not only do you have an endless variety of cheeses, but also have the option of add-ins. Tomato, peppers, bacon, mushrooms… the list goes on and on.
There seems to be a trend of restaurants dedicated to making grilled cheese sandwiches. While they have some really great ideas for sandwiches, sadly I have not seen any low carb bread options. I use bread from my local grocery story, H-E-B, which carries this Scratch Pro-tein bread that clocks in at about 2.5 net carbs per slice (more info on the bread can be found in this post). I use it for all sorts of creations including this Keto grilled bacon & pimento cheese sandwich.
Pimento cheese spread can easily be purchased at the store, but it’s just as easy to make it at home. It’s literally just cheese and mayo. Of course, you can kick it up with more ingredients such as mustard, garlic, jalapeños, etc. but I like to keep it simple. I used some extra sharp cheddar cheese, avocado mayo, spicy pimento peppers and a little celery salt. Add a couple pieces of crispy bacon then pan toast the bread with a pad a butter. Simple. Delicious.
The pan method will slightly warm the cheese spread inside the sandwich, but if you’d prefer to have the cheese melty-soft, you can just set it in a 350°F oven for a few minutes after grilling the sandwich to melt the cheese inside.
Keto Grilled Bacon & Pimento Cheese Sandwich
- 8 oz sharp cheddar cheese shredded
- 1/2 cup pimentos chopped
- 1/4 cup mayonnaise
- 1/4 tsp celery salt
- 4 slices bacon
- In a medium bowl, mix all ingredients until combined . Season with additional salt & pepper if necessary.
- Add cheese spread to your favorite bread. Add cooked bacon strips and then toast on a non-stick pan over medium heat with a little melted butter.
